Add to pot with water to cover it and boil over high heat until they are cooked through, but not overcooked. Around 20 minutes. You can tell they are cooked through when you can just fork them easily. Allow to cool.
Add all to the dressing ingredients to a bowl and mix up. Taste and add salt and pepper as need and enjoy!

To make vegan, omit the bocconcini and ensure that you are using vegan mayo.
